300gCaerphilly or mature cheddar, grated
2leeks, white part only, finely diced and softened
2 cupsfresh white breadcrumbs
2eggs, lightly beaten
1 tspEnglish mustard
1 tspfresh thyme
salt and pepperto taste
1/2 cupplain flour
1egg, beaten for coating
1 cupbreadcrumbs for coating
oilfor frying
Instructions

Mix cheese, leek, breadcrumbs, eggs, mustard and thyme. Season.

Shape into sausage-like rolls.

Coat each in flour, then egg, then breadcrumbs.

Shallow-fry in oil over medium heat 8-10 minutes turning until golden.

Drain on paper towel and serve with chutney.
