Ingredients

400gmixed dried fruit
300mlstrong hot tea
250gself-raising flour
150gbrown sugar
1egg
2 tspmixed spice
butterto serve

Instructions

Soak fruit in hot tea overnight or for at least 4 hours.

Beat in sugar, egg and mixed spice.

Fold in flour until combined.

Pour into a greased loaf tin.

Bake at 160°C for 1 hour 15 minutes. Cool fully before slicing and spreading with butter.
