2 headsromaine lettuce, torn
100gparmesan, finely grated
200gsourdough bread, cubed
4 tbspolive oil
3 clovesgarlic
4anchovy fillets
2egg yolks
2 tbsplemon juice
1 tbspDijon mustard
1 tspWorcestershire sauce
1/2 cupextra-virgin olive oil

Make croutons: toss bread with olive oil and 1 crushed garlic clove. Bake at 200°C for 12 minutes until golden.

Mash remaining garlic and anchovies into a paste. Whisk in egg yolks, lemon juice, mustard and Worcestershire.

Slowly whisk in extra-virgin olive oil until creamy. Fold in half the parmesan.

Toss lettuce with dressing until well coated.

Arrange on plates, top with croutons and remaining parmesan.
