
Easy Anzac Biscuits
Chewy oat and golden syrup biscuits from Australia and New Zealand — the bicarb and hot syrup fizz together when combined, which is what gives the biscuits their signature slightly cracked top.

Melt the golden syrup with the butter in a saucepan over low heat, then stir in the bicarbonate of soda, it will foam up, which is normal.
Mix the foaming syrup through the oats, coconut and flour until a dough forms that holds together when pressed.
Shape tablespoons of the dough into rounds, place on a lined tray and flatten slightly with your palm.
Bake at 160C for 15-18 minutes until golden, they will firm up further as they cool, so do not wait for them to feel fully set in the oven.
