300gfresh white fish, diced
200gcooked prawns
150gsquid rings, cooked
6limes, juiced
1red onion, thinly sliced
2aji amarillo chillis, minced
1 handfulfresh coriander
1 tspsalt
sweet potato, boiled and slicedto serve

Instructions

Soak red onion in salted water 10 minutes, drain.

Mix raw fish with lime juice and salt, cure 10 minutes.

Add prawns, squid, onion, chilli and coriander.

Toss gently and taste leche de tigre.

Adjust lime and salt.

Serve immediately with sweet potato and choclo.
