Simnel Cake
A traditional British Easter cake layered with dried fruit and a hidden band of marzipan through the middle. Rolling a third of the marzipan to sit inside the batter before baking is what creates that signature layer running through the centre of the finished cake.
Ingredients
Instructions
Beat butter and sugar. Beat in eggs.
Fold in flour, spices, dried fruit and cherries.
Roll 1/3 of marzipan to fit tin. Layer cake mixture, marzipan, more cake mixture.
Bake at 160°C for 1.5-2 hours. Cool.
Brush top with jam. Cover with remaining marzipan. Toast.
