Plum Pudding

The traditional British Christmas steamed pudding filled with dried fruit and served flambeed. Soaking the dried fruit in brandy overnight before it meets the batter lets the alcohol actually penetrate the fruit, rather than just flavouring the outside.

Ingredients

200gmixed dried fruit
100gcurrants
100graisins
75gmixed peel
100mlbrandy or dark rum
150gdark brown sugar
150gsuet
150gplain flour
150gfresh breadcrumbs
2 tspmixed spice
1 tspcinnamon
3eggs
2 tbsptreacle
75mldark ale
brandy to flambeeoptional

Instructions

Soak all dried fruit in brandy overnight.

Mix sugar, suet, flour, breadcrumbs and spices.

Beat in eggs, treacle and ale. Stir in soaked fruit.

Pour into a greased 1.2L pudding basin. Cover with foil. Steam for 6 hours.

Reheat on Christmas Day for 2 hours. Flambee with warm brandy.
