For kaya: 4egg yolks
200mlcoconut milk
150gsugar
10pandan leaves or 2 tsp pandan extract
thick white breadtoasted
cold butter, slicedto serve
soft-boiled eggs, light soy and white pepperto serve

Blend pandan leaves with coconut milk, strain.

Whisk yolks and sugar. Add pandan coconut milk.

Cook over a bain-marie, stirring constantly 30–40 minutes until thick like jam.

Toast bread and spread one side with kaya, add cold butter.
