Singapore's iconic chilli and tomato sauce crab — scooped up with fried mantou buns. Stirring the beaten egg in at the very end, so it sets in loose ribbons, is what gives the sauce its silky finish.

1.5kgfresh mud crab or Dungeness crab, cleaned and halved
4 tbspsambal oelek
4 tbspketchup
2 tbspsoy sauce
1 tbspsugar
200mlchicken stock
4 clovesgarlic
3 cmginger
4spring onions
2eggs, beaten
3 tbspoil
fried mantou bunsto serve
Instructions

Blend garlic, ginger and spring onion.

Fry paste in oil 2 minutes.

Add sambal, ketchup, soy, sugar and stock.

Add crab pieces. Toss to coat.

Cover and cook 12–15 minutes until crab is cooked.

Stir in beaten eggs — they should set in ribbons.

Serve with fried mantou.
