Mango Coconut Slice

A tropical no-bake slice with a crumbed biscuit base and a creamy mango coconut filling — a proper summer treat. Dissolving the gelatine fully in hot water before folding it through the cream cheese mixture is what lets the filling set firm enough to slice cleanly rather than staying soft and unstable.
