Ingredients

1.5 lbpancetta
1 cupporcini mushrooms
1/2 cupgarlic
300gpolenta
2 tspbalsamic vinegar
2 tspparmesan
to tasteextra virgin olive oil
2 tbspchili flakes
1 tbspolive oil
to tastesalt and black pepper

Instructions

Slice the pancetta and roast it over medium-high heat until well browned, about 6 minutes.

Add the porcini mushrooms and garlic, cooking until softened, about 4 minutes.

Stir in the balsamic vinegar, parmesan, extra virgin olive oil and chili flakes for 3 minutes.

Cook the polenta separately, stirring until thickened.

Let everything simmer for about 19 minutes so the flavors meld.
