Sticky Date Pudding

Moist, caramel-rich date pudding smothered in a warm butterscotch sauce. Soaking the dates in boiling water with a little bicarb before mashing them in is what softens them into the batter completely, giving the pudding its dense, sticky texture rather than leaving chewy flecks throughout.

Ingredients

200gpitted dates, roughly chopped
1 cupboiling water
1 tspbicarbonate of soda
80gbutter, softened
3/4 cupbrown sugar
2eggs
1 tspvanilla extract
1 1/2 cupsself-raising flour
1 cupbrown sugar
300mlthickened cream
60gbutter
ice creamto serve

Instructions

Soak dates in boiling water with bicarb for 10 minutes. Mash roughly.

Beat butter and brown sugar until pale. Add eggs and vanilla.

Fold in flour, then stir in date mixture.

Bake in a greased dish at 180°C for 30 minutes until set.

Make sauce: simmer brown sugar, cream and butter 5 minutes. Pour over warm pudding. Serve with ice cream.
