
Khao Pad (Thai Fried Rice)
Fragrant Thai fried rice tossed with egg, fish sauce and spring onion — simple but done exactly right. Using rice that's been cooked and cooled beforehand is what lets it fry loose and separate in the wok, rather than clumping into a sticky mass.

Ingredients
400gcooked jasmine rice, cooled
2eggs, beaten
1white onion, diced
3 clovesgarlic, minced
3 tbspfish sauce
1 tbspsoy sauce
1 tspsugar
3 tbspvegetable oil
spring onions, cucumber and limeto serve

Heat wok with oil. Fry garlic and onion 2 minutes.

Push to side. Add eggs, scramble.

Add cold rice, toss on high heat to break up and fry 3 minutes.

Season with fish sauce, soy and sugar.

Scatter spring onions. Serve with cucumber slices and lime wedges.
