400ggreen papaya, peeled and julienned
12cherry tomatoes, halved
4long beans or green beans, cut
3bird's eye chillies
2 clovesgarlic
2 tbspdried shrimp
4 tbspfish sauce
4 tbsplime juice
2 tbsppalm sugar
50groasted peanuts
Instructions

Pound chillies, garlic and dried shrimp in a mortar.

Add long beans — pound gently.

Add tomatoes — pound gently to burst them.

Add papaya, fish sauce, lime and palm sugar.

Toss with a large spoon.

Adjust seasoning — sour, sweet, salty, spicy.
