
Ackee and Saltfish
Jamaica's national dish — salted cod sautéed with ackee, onion, scotch bonnet and tomato. Soaking the saltfish overnight in cold water before boiling it draws out its excess salt, so the finished dish is seasoned rather than overwhelmingly salty.

400gsaltfish (dried salted cod)
1 tinackee, drained
1onion, sliced
1scotch bonnet, finely chopped
2 clovesgarlic, sliced
2tomatoes, diced
1green capsicum, sliced
3 tbspvegetable oil
fresh thymesprig
black pepperto taste

Soak saltfish overnight in cold water. Drain. Boil 15 minutes. Drain and flake.

Heat oil. Sauté onion, garlic, scotch bonnet and thyme.

Add tomatoes and capsicum. Cook 3 minutes.

Add flaked saltfish. Cook 2 minutes.

Gently fold in ackee. Season and serve with dumplings.
