A Caribbean-style shrimp jerk with scotch bonnet pepper and plantain, finished with coconut milk, allspice and jerk seasoning, served over fried plantain.

Season the shrimp and simmer over medium-high heat until well browned, about 9 minutes.
Add the scotch bonnet pepper and plantain, cooking until softened, about 5 minutes.
Stir in the coconut milk, allspice, jerk seasoning and thyme for 4 minutes until fragrant.
Prepare the fried plantain separately according to package directions.
Let the shrimp simmer for about 8 minutes so the jerk flavors deepen.
Taste and adjust the seasoning.
Serve hot over the fried plantain, garnished with fresh herbs.
