8Balmain bug tails or large prawns, halved
400glinguine
4 clovesgarlic, sliced
1 cupcherry tomatoes, halved
1/2 cupdry white wine
3 tbspbutter
3 tbspolive oil
1/2 tspchilli flakes
fresh flat-leaf parsleyhandful
salt and pepperto taste

Instructions

Cook linguine in salted boiling water until al dente. Reserve 1/2 cup pasta water.

Heat olive oil in a large pan. Sauté garlic and chilli 30 seconds.

Add bugs and cook 2-3 minutes per side. Add tomatoes and wine. Simmer 3 minutes.

Add drained pasta, pasta water and butter. Toss well.

Season generously and scatter with parsley.
