Ingredients

4 tbspbutter, melted
3/4 cupbrown sugar
1 tin (440g)pineapple rings, drained
6-8maraschino cherries
175gbutter, softened
3/4 cupcaster sugar
3eggs
1 1/2 cupsself-raising flour
1 tspvanilla extract
1/2 cupsour cream

Instructions

Pour melted butter into a 23cm round tin. Press brown sugar in.

Arrange pineapple rings and cherries on the sugar.

Beat butter and caster sugar. Add eggs one at a time.

Fold in flour, vanilla and sour cream.

Spoon over pineapple. Bake at 180°C for 45-50 minutes. Invert to serve.
