1.5kgpork belly, scored
2 tspsea salt
1 tspfennel seeds, crushed
1 tspblack pepper
3Granny Smith apples, peeled and diced
3 tbspcaster sugar
2 tbsplemon juice
pinchcinnamon
Instructions

Rub pork with salt, fennel and pepper. Refrigerate uncovered overnight.

Roast at 220°C for 30 minutes. Reduce to 160°C for 1.5 hours.

Blast at 220°C for final 15 minutes to crisp crackling.

Make apple sauce: cook apples with sugar, lemon and cinnamon 15 minutes. Mash.

Rest pork 15 minutes before slicing.
