Ingredients

1.5 cupsred lentils
1onion, diced
1 tbspground cumin
5 cupsvegetable stock
1lemon to serve

Instructions

Saute the onion until properly soft.

Stir in the cumin for a minute to bloom its flavour before anything else joins the pan.

Add the lentils and stock, then simmer for 20 minutes, until the lentils have fully broken down and softened, which happens fast since red lentils cook quicker than most.

Blend until smooth if you like a silky soup, or leave it textured, but finish with a genuine squeeze of lemon either way, it is what balances the earthiness of the lentils.
