Peruvian stir-fried beef with capsicum, soy sauce and chips (French fries). Searing the beef on very high heat for just long enough to brown the outside keeps it tender, since lomo saltado is a fast stir-fry, not a slow-cooked braise.

2 tbspred wine vinegar

Instructions

Stir-fry beef on very high heat until seared. Remove.

Fry onion and capsicum on high 2 minutes.

Add tomatoes and chillies.

Add soy, vinegar and oyster sauce.

Serve over rice with chips mixed through.
