1.2kgwhole red snapper, cleaned
2tomatoes, sliced
1onion, sliced
1green pepper, sliced
4 clovesgarlic, minced
2 tbspolive oil
1 tspthyme
1 tsppaprika
juice of 1lime
scotch bonnetto taste
Instructions

Score fish, rub with lime, garlic, paprika, thyme and salt. Marinate 1 hour.

Spread tomatoes, onion and pepper in a baking dish. Add oil.

Place fish on top of vegetables.

Pour any remaining marinade over. Tuck scotch bonnet alongside.

Bake at 200°C for 25–30 minutes until fish is cooked through and vegetables are soft.
