Ingredients

2 cupssnapper fillets
200gscotch bonnet pepper
1/2 cupplantain
200gsweet potato
2 cupsfried plantain
to tastelime juice
1/4 cupjerk seasoning
1 tbspallspice
1/4 cupcoconut milk
3 tbspolive oil
to tastesalt and black pepper

Instructions

Season the snapper fillets and roast them over medium-high heat until well browned, about 9 minutes.

Add the scotch bonnet pepper, plantain and sweet potato, cooking until softened, about 7 minutes.

Stir in the lime juice, jerk seasoning, allspice and coconut milk for 3 minutes.

Prepare the fried plantain separately according to package directions.

Let the snapper simmer for about 19 minutes so the jerk flavors deepen.

Taste and adjust the seasoning.
