Traditionally spiced Easter buns with dried fruit and a cross of white icing. Piping the flour-and-water paste into a cross before the buns bake, rather than icing afterward, gives that cross its distinctive baked-in texture instead of sitting on top like frosting.

500gstrong white flour
7gdried yeast
75gcaster sugar
1 tspsalt
1 tspcinnamon
1 tspmixed spice
50gbutter, melted
200mlwarm milk
2eggs
200gmixed dried fruit
2 tbspplain flour for cross
3 tbspwater for cross
3 tbspapricot jam, warmed for glaze

Instructions

Mix flour, yeast, sugar, salt and spices. Add butter, milk and eggs. Knead 10 minutes.

Add dried fruit. Rest 1.5 hours.

Shape into 12 buns. Rest 45 minutes.

Pipe a flour-and-water cross over each. Bake at 200°C for 18-20 minutes.

Brush with warm jam glaze.
