Ingredients

600gcooked chickpeas
2large onions, finely diced
400gcrushed tomatoes
4 clovesgarlic, minced
2cmfresh ginger, minced
2 tspchole masala or garam masala
1 tspturmeric
1 tspamchur
300gplain flour for bhature
200mlyoghurt
1 tspbaking powder
3 tbspvegetable oil
oil for deep frying bhature

Instructions

Fry onions until very dark, add garlic and ginger.

Add spices, cook 2 minutes.

Add tomatoes and cook 10 minutes until rich.

Add chickpeas and simmer 20 minutes, mashing some for thickness.

For bhature: mix flour, yoghurt, baking powder and oil into a soft dough, rest 30 minutes.

Divide into 8 balls, roll into ovals.

Deep fry at 180C until puffed and golden on both sides.

Serve bhature immediately with chole and sliced onion.
