Soft-boiled eggs encased in spiced pork sausage and fried in crispy breadcrumbs. Chilling the peeled soft-boiled eggs before wrapping them in sausage meat makes them firm enough to handle without breaking the yolk.

Ingredients

6eggs
500gpork sausage mince
1 tspdried thyme
1 tspdried sage
1/2 tspnutmeg
1 tspDijon mustard
1/2 cupplain flour
2eggs, beaten
1 cuppanko breadcrumbs
vegetable oilfor frying
salt and pepperto taste

Instructions

Boil 4 eggs for 5 minutes (soft-boil), 2 remaining eggs hard-boil. Peel all and chill.

Mix sausage mince with thyme, sage, nutmeg, mustard, salt and pepper.

Flatten sausage meat, wrap around each soft-boiled egg, pressing firmly.

Dredge in flour, then beaten egg, then breadcrumbs.

Deep-fry at 170°C for 8-9 minutes until deep golden. Drain and rest 2 minutes.
