Mumbai street food — spiced minced lamb with peas served with buttered soft bread rolls. Cooking the mince over high heat until it's properly browned and dry, rather than steaming in its own liquid, gives keema its distinct crumbly texture.

Ingredients

600glamb or beef mince
200gfrozen peas
2large onions, finely diced
3ripe tomatoes, diced
4 clovesgarlic, minced
2cmfresh ginger, minced
2green chillis, minced
2 tspground cumin
2 tspground coriander
1 tspgaram masala
1 tspturmeric
3 tbspvegetable oil
4soft dinner rolls or pav
butterfor the rolls
1 handfulfresh coriander

Instructions

Fry onions in oil until deep golden, add garlic, ginger and chilli.

Add all ground spices, cook 2 minutes.

Add mince and cook over high heat until browned and dry.

Add tomatoes and cook 10 minutes.

Add peas and 100ml water, simmer 10 more minutes.

Season generously, scatter with coriander.

Slice rolls, butter generously and toast on a hot pan.

Serve keema with toasted pav rolls — use the bread to scoop up the keema.
