Ingredients

2 cupshalloumi
150gsweet corn
200gcauliflower
300gbasmati rice
2 tspgarlic
1 tbspchili flakes
1 tspfresh herbs
2 tbspolive oil
to tastesalt and black pepper

Instructions

Slice the halloumi and saute it over medium-high heat until well browned, about 4 minutes.

Add the sweet corn and cauliflower, cooking until softened, about 7 minutes.

Stir in the garlic, chili flakes and fresh herbs for 3 minutes.

Cook the basmati rice separately and fluff with a fork.

Let the halloumi simmer for about 5 minutes so the flavors meld.
