600gtuna steaks, cubed
4 tbspgoraka (Malabar tamarind) or tamarind paste
4 clovesgarlic, sliced
2 tspblack pepper, ground
1 tspturmeric

Instructions

Dissolve goraka in 100ml water.

Mix fish with goraka water, garlic, pepper, turmeric and curry leaves.

Cook in a clay pot or heavy pan over low heat, stirring occasionally.

Cook 20–25 minutes until fish is nearly dry and sauce has completely evaporated.

Season. The curry should be very dry and intensely sour.
