2 cupsred lentils
1large onion, diced
3 clovesgarlic
2 tbspolive oil
2 tspcumin
1 tspsmoked paprika
½ tspturmeric
1 candiced tomatoes
5 cupsvegetable broth
juice of 1 lemon
fresh parsleyto garnish

Sauté onion and garlic in oil until soft; add spices; toast 1 minute.

Add lentils, tomatoes, and broth. Bring to boil; simmer 25 minutes until lentils are soft.

Partially blend for texture. Stir in lemon juice.
