Australian pub-style chilli mussels steamed in a spicy tomato sauce with crusty bread. Reducing the wine by half before the tomatoes go in concentrates its flavour into the sauce rather than leaving it tasting thin and boozy.

Ingredients

1.5kgfresh mussels, cleaned
400gtinned crushed tomatoes
1onion, finely diced
4 clovesgarlic, minced
2long red chillies, sliced
150mlwhite wine
2 tbspolive oil
1 tspsmoked paprika
fresh parsleyto serve
crusty breadto serve

Instructions

Fry onion and garlic in olive oil until soft.

Add chilli and paprika. Cook 1 minute.

Add white wine. Reduce by half.

Add tomatoes. Simmer 10 minutes.

Add mussels. Cover and cook 5–6 minutes until mussels open.

Discard any unopened mussels.

Top with parsley. Serve with bread for the sauce.
