600gfresh mackerel or skipjack tuna, cleaned
6kamias (bilimbi) or 3 tbsp calamansi juice
3 tbsprock salt
200mlwater
banana leavesto line pot (optional)

Rub fish generously with rock salt.

Line a heavy pot with banana leaves if using.

Layer fish and kamias in the pot. Add water.

Cook over very low heat 2–3 hours until bones have softened.

Serve with rice and fermented shrimp paste.
