300gplain flour
5ginstant yeast
1 tbspsugar
1 tspbaking powder
150mlwarm water
1 tbspvegetable oil
300gchar siu pork, diced small
2 tbsphoisin sauce
1 tbspoyster sauce
1 tspsesame oil
1 tbspcornflour with 3 tbsp water
Instructions

Mix flour, yeast, sugar, baking powder, water and oil. Knead 10 minutes. Prove 1 hour.

Cook char siu filling with hoisin, oyster sauce and sesame oil. Thicken with cornflour slurry. Cool.

Divide dough into 12 balls. Flatten each, place filling in centre. Pleat edges to seal.

Prove 20 minutes.

Steam on parchment 12–14 minutes until puffed and cooked through.
