1 cupplain flour
1 cuprolled oats
1 cupdesiccated coconut
1 cupcaster sugar
125gbutter
2 tbspgolden syrup
1 tspbicarbonate of soda
2 tbspboiling water

Combine flour, oats, coconut and sugar.

Melt butter and golden syrup together. Mix bicarb with boiling water and stir into butter mixture — it will foam.

Stir into dry ingredients.

Roll tablespoons of mixture into balls. Place on lined trays and flatten slightly.

Bake at 160°C for 15 minutes. Cool on trays — they crisp as they cool.
