400gbread flour
7gyeast
60gsugar
200mlwarm milk
60gbutter
300gchar siu pork diced
2 tbspoyster sauce
1 tbspsoy sauce
1 tbspsugar for filling
1 tbspcornflour
2 tbsphoney mixed with 1 tbsp water for glaze

Instructions

Make enriched dough. Prove 1 hour.

Mix filling: toss char siu with oyster sauce, soy, sugar and cornflour.

Divide dough into 12. Flatten each. Fill and seal into smooth buns.

Prove on lined tray 30 minutes.

Brush with honey glaze. Bake at 190°C for 15–18 minutes until golden. Glaze again hot.
