Season the pork belly and sear it over medium-high heat until well browned, about 8 minutes.

Add the edamame and scallions, cooking until softened, about 3 minutes.

Stir in the sesame seeds, mirin, miso paste and dashi for a final minute.

Cook the short-grain rice separately and fluff with a fork.
