8pork sausages
200gback bacon rashers, cut into pieces
1kgpotatoes, peeled and thickly sliced
2large onions, thinly sliced
500mlchicken or pork stock
fresh parsleyhandful, chopped
salt and pepperto taste
soda breadto serve
Instructions

Grill sausages and bacon for 5 minutes to remove some fat.

Layer potatoes, onion, bacon and sausages in a heavy pot. Season each layer. Sprinkle parsley over each layer.

Pour over stock. Cover tightly.

Cook at 160°C for 2 hours until potatoes are very tender.

Serve in deep bowls with soda bread.
