3 tbsphoney
2 tbspsoy sauce
2 tbspShaoxing wine

Instructions

Clean goose, remove excess fat. Air-dry in fridge uncovered 24 hours.

Mix hoisin, five spice, soy and wine. Rub inside cavity. Stuff with garlic and ginger.

Blanch outside with boiling water, coat with honey glaze.

Air-dry 12 more hours.

Roast on a rack at 200°C for 1.5 hours, basting every 30 minutes.

Rest 15 minutes, chop and serve with plum sauce.
