400gfresh flat rice noodles
300gbeef sirloin, thinly sliced
100gbean sprouts
4spring onions
3 tbspdark soy sauce
2 tbspsoy sauce
1 tspsugar
1 tbspcornflour
3 tbsplard or vegetable oil
Instructions

Marinate beef with 1 tbsp soy and cornflour for 15 minutes.

Separate noodles gently.

Heat wok with lard until smoking. Stir-fry beef until browned. Remove.

In same wok, add noodles, toss hard on high heat.

Add dark soy, remaining soy and sugar. Return beef with bean sprouts and spring onions. Toss 1 minute.
