Ingredients
1kgmutton or lamb on the bone, cut in pieces
3large onions, finely diced
400gcrushed tomatoes
5 clovesgarlic, minced
3cmfresh ginger, minced
300mlfull fat yoghurt
2 tspground coriander
2 tspground cumin
1 tspturmeric
1 tspchilli powder
2 tspgaram masala
4 tbspghee
4cardamom pods
1cinnamon stick
1 handfulfresh coriander
Instructions

Fry whole spices in ghee until fragrant, add onions and cook 25 minutes until very dark golden.

Add garlic and ginger, cook 3 minutes.

Add all ground spices, cook 2 minutes.

Add mutton, brown over high heat.

Add yoghurt a spoonful at a time.

Add tomatoes and cook 10 minutes.

Add 300ml water, cover and simmer 1.5 hours until mutton is very tender.

Reduce sauce, scatter with coriander and serve with rice or roti.
