800gchicken pieces, bone-in
500gbasmati rice, soaked 30 minutes
2large onions, thinly sliced
200gyoghurt
1 tspsaffron in 3 tbsp warm milk
1 tspgaram masala
1 tspbiryani masala
2 tspginger-garlic paste
fresh mint and coriandergenerous handful
4 tbspghee
Instructions

Fry onions until crispy and deep golden. Divide into two portions.

Marinate chicken with yoghurt, spices, ginger-garlic and half the fried onion overnight.

Parboil drained rice until 70% cooked.

Layer: marinated chicken, then rice, then remaining onion, saffron milk, fresh herbs. Repeat.

Seal with dough or foil. Cook on dum (low heat) 30 minutes.

Rest 10 minutes, gently scoop into a serving bowl.
