600gfresh sardines, cleaned and filleted
500gwhite onions, thinly sliced
150mlwhite wine vinegar
50graisins, soaked in water
50gpine nuts, toasted
100gplain flour
1 tspsugar
4 tbspolive oil
Instructions

Dust sardine fillets in flour and fry in olive oil until golden, drain.

In same pan slowly caramelise onions in olive oil 30 minutes.

Add vinegar, sugar, drained raisins and pine nuts to onions.

Simmer 10 minutes until a sweet and sour sauce forms.

Layer sardines and onion sauce in a container.

Refrigerate at least 24 hours before serving at room temperature.
