600gpork shoulder, cubed
1egg, beaten
4 tbspcornflour
1red capsicum, diced
1green capsicum, diced
1pineapple chunk, diced
3 tbsptomato ketchup
3 tbsprice vinegar
3 tbspsugar
1 tbspsoy sauce
vegetable oilfor frying
Instructions

Dip pork in egg then cornflour. Deep-fry at 175°C until golden. Drain.

Mix ketchup, vinegar, sugar and soy as sauce.

Stir-fry capsicums 2 minutes in a hot wok.

Add sauce and pineapple, bring to bubble.

Return pork, toss to coat in sauce. Serve immediately over rice.
