General Tso's Chicken
Crispy fried chicken in a sweet-spicy sauce — a Chinese-American restaurant icon. Coating the chicken thoroughly in cornflour before frying builds the crisp shell that holds up under the sticky sauce instead of turning soft the moment it's tossed.
