Ingredients

400gduck
1/2 cupscallions
1 cupsnow peas
2 cupsrice noodles
1 tsphoisin sauce
1 tbspShaoxing wine
2 tbspchili oil
1 tspsesame oil
3 tbspolive oil

Instructions

Score the duck skin in a crosshatch pattern, season, then place skin-side down in a hot pan to render the fat, about 9 minutes.

Add the scallions and snow peas, cooking until softened, about 3 minutes.

Stir in the hoisin sauce, Shaoxing wine, chili oil and sesame oil for 4 minutes.

Cook the rice noodles separately according to package directions.

Let the duck simmer for about 9 minutes so the flavors meld.
