Xinjiang-style lamb skewers coated in cumin, chilli and sesame — the flavour of China's northwest. Roughly crushing the cumin seeds instead of using ground cumin gives every bite a burst of texture the powder can't match.

600glamb shoulder, cut into 2cm cubes
2 tspcumin seeds, roughly ground
1 tspchilli flakes
1 tspsesame seeds
1 tspsalt
1 tbspvegetable oil
Instructions

Thread lamb onto metal skewers.

Mix cumin, chilli, sesame seeds and salt.

Brush lamb with oil.

Grill or barbecue over high heat 8–10 minutes, turning frequently.

During last 2 minutes, sprinkle spice mix generously over skewers.
