8good-quality pork sausages
1kgfloury potatoes, peeled and boiled
4 tbspbutter
1/2 cupwarm cream
3large brown onions, thinly sliced
2 tbspbutter
1 tbspolive oil
1 tspsugar
1 tbspplain flour
1 cupbeef stock
1 tbspWorcestershire sauce
salt and pepperto taste

Slowly fry sausages over medium-low heat, turning often, for 20 minutes until evenly browned.

Make gravy: cook onions in butter and oil with sugar over low heat for 25 minutes until deeply caramelised. Stir in flour, then stock and Worcestershire. Simmer 5 minutes.

Mash potatoes with butter and cream. Season well.
