The traditional Yorkshire parkin — stickier and darker than gingerbread, and better for it. Wrapping it and letting it sit for a few days is genuinely part of the recipe; parkin gets stickier and more flavourful with age.

125gbutter
125ggolden syrup
125gblack treacle
125gdark brown sugar
175gmedium oatmeal
175gself-raising flour
2 tspground ginger
1 tspcinnamon
1/2 tspbicarbonate of soda
1egg
3 tbspwarm milk
Instructions

Melt butter, syrup, treacle and sugar over low heat.

Beat in egg and warm milk.

Mix oatmeal, flour, ginger, cinnamon and bicarb. Stir into the liquid.

Pour into a lined 23x23cm tin.

Bake at 160°C for 40-45 minutes. Cool and wrap in greaseproof paper. Keep 3-5 days.
