1.5kgmud crab or blue swimmer crabs, cleaned and halved
4 tbspsambal chilli paste
400gcrushed tomatoes
3 tbsptomato ketchup
2 tbspsugar
2 tbsplight soy sauce
2eggs, beaten
4 clovesgarlic, minced
2cmfresh ginger, minced
4 tbspvegetable oil
2spring onions, sliced
1 handfulcoriander
Instructions

Heat oil in a large wok over high heat.

Fry garlic, ginger and sambal paste 2 minutes until fragrant.

Add crab pieces, toss to coat in paste and cook 5 minutes.

Add crushed tomatoes, ketchup, sugar and soy sauce.

Cover and cook 8 minutes until crab is cooked through.

Drizzle beaten eggs into the sauce while stirring to create egg threads.

Scatter with spring onions and coriander, serve with mantou buns to mop up sauce.
