200gplain flour
30gcaster sugar
30gbutter, softened
60mldry marsala wine
1egg
500gfresh ricotta, drained overnight
150gicing sugar
80gdark chocolate chips
50gcandied orange peel, finely chopped
1Lvegetable oil for frying
Instructions

Mix flour, sugar, butter, marsala and egg into a firm dough, rest 1 hour.

Roll dough very thin, cut circles 10cm diameter.

Wrap circles around metal cannoli tubes, seal edges with egg white.

Fry at 180C until deep golden, cool before sliding off tubes.

Beat drained ricotta with icing sugar until smooth.

Fold in chocolate chips and candied peel.

Fill shells just before serving using a piping bag.
